Chef Vikram Vij studied Hotel Management in Austria and worked at some of the top restaurants in Europe and Canada, including the Hotel Post in Lech, the Banff Springs Hotel and Bishop's in Vancouver. In 1994, Chef Vij opened his first restaurant to great success and won Chef of the Year and was written up by the NY Times as “One of the finest Indian Restaurants in the World' by Mark Bittman. Vikram has appeared in many cooking shows and competitions, such as Top Chef Canada, Chopped Canada, and Recipe to Riches. He was the first Indo-Canadian Dragon on the very popular show, Dragon's Den and has given many keynote speeches to inspire young chefs and promote local cuisine and wine makers. This year Vij's had the honour of serving the Duke and Duchess of Sussex, along with a very famous Canadian singer, Michael Bublé and his wife. Vij's is known for an innovative take on Indian Cuisine and believes that cuisines should constantly evolve but still represent its deep-rooted heritage and culture. Chef Vikram Vij likes to take people off the beaten path during his travels and visits local homes and some great restaurants to constantly challenge his own thinking about cuisine. Vikram travels not as a Chef but as a student and wants to learn from hosts about the food, ingredients, and its history.
